Dans un bol, m\u00e9langer le tiers du beurre fondu, les grains de vanille, le vinaigre et le poivre rose.<\/li><li>4. Dans le bol d\u2019un m\u00e9langeur, verser le tiers du beurre fondu, ajouter le poivron rouge, l\u2019ail, le jus de citron et l\u2019origan. M\u00e9langer jusqu\u2019\u00e0 ce que le tout soit homog\u00e8ne.<\/li><li>5. Dans le bol d\u2019un m\u00e9langeur, verser le dernier tiers de beurre fondu. Ajouter le thym, le basilic et la ciboulette. M\u00e9langer jusqu\u2019\u00e0 ce que le tout soit homog\u00e8ne.<\/li><li>6. Verser chaque beurre dans un petit bol s\u00e9par\u00e9. Au moment de servir, couper les homards cuits en deux sur le sens de la longueur et casser les pinces. Ouvrir et retirer la poche de gravier, l\u2019intestin, le foie (vert) et le corail (noir). Retirer la chair du homard et tremper dans les beurres aromatis\u00e9s.<\/li><li>7. Pour gagner du temps, pr\u00e9parer les beurres aromatis\u00e9s \u00e0 l\u2019avance en m\u00e9langeant le tiers du beurre \u00e0 temp\u00e9rature ambiante avec les ingr\u00e9dients de son choix (balsamique, poivron ou fines herbes). D\u00e9poser le m\u00e9lange sur une pellicule plastique. Refermer la pellicule plastique sur le beurre et rouler pour former un cylindre de 3 cm (1 \u00bc po) de diam\u00e8tre.
